Ingredients

Instructions
- Add butterfly pea flowers to warm water in a teapot or bowl. Let steep for 10 minutes until the water turns a vibrant blue.
- Strain the tea to remove the flowers and allow it to cool to room temperature.
- Stir in honey or sugar until completely dissolved.
- Pour in lemon juice slowly. The tea will shift color from blue to purple as the acidity changes.
- Fill serving glasses with ice. Pour the purple tea mixture halfway into each glass.
- Top with soda water if using, then garnish with lemon slices and mint leaves. Serve immediately.
